BEEF FAJITAS

INGREDIENTS:      Serves  2
300g  sirion steak, cut into 1cm strips
3 tsp  fajita seasoning mix
1  tbsp  canola oil
1  medium red pepper, julienned
1  medium yellow pepper, julienned
1  large onion, julienned
1  tbsp lime juice
1  large flour tortilla, warmed
A  dollop each of tomato salsa, guacamole and sour cream (optional), to serve

METHOD:
  • Marinate beef strips with fajita seasoning for 15 min.
  • Heat oil in a frying pan and saute peppers ad onion for 3-4 min, then add marinated steak strips and cook for 10 mins, until strips become tender and turn brown. Remove from heat and stir in lime juice.
  • Place tortilla on a flat surface and spread beef-pepper mixture on one side.Then bring edges over and roll in such a way that the sides are sealed. cut in half and serve with tomato salsa, guacamole and sour cream, if desired.
