INGREDIENTS: Serves 6
450g minced beef
1 onion, chopped
2 cloves garlic, minced
1 tbsp olive oil
1 cup sliced fresh mushrooms
1/2 cup green pepper, chopped
1 courgette, cut into 1cm cubes
100g dry vermicelli, broken into 5cm pieces
3 tsp dried Italian seasoning
Salt and pepper,to taste
350g can of no-salt-added whole tomatoes
700ml tomato juice
1 cup fresh spinach leaves, coarsely chopped
1/4 cup parmesan cheese, grated
Method:

100g dry vermicelli, broken into 5cm pieces

1/4 cup parmesan cheese, grated
Method:
- Spray a large skillet with non-stick spray coating.cook beef, onion and garlic over medium heat. Drain, set aside.
- Return skillet to heat and add olive oil. Add mushrooms, green pepper and courgette; stir -fry 2-3 minutes. Add vermicelli. Cook until pasta is golden brown and vegetables are al dente. Add cooked meat, seasoning, tomatoes and tomato juice. Cover and simmer for 20 minutes.
- Stir in spinach, cover and continue to cook for 5 minutes. Sprinkle with parmesan just before serving.
