COTTAGE PIE

INGREDIENTS:

20ml  oil
450g  lean beef mince
1  onion, chopped
1  carrot, grated
80ml  fruit chutney
410g  canned tomatoes, chopped
1  tbsp cumin seeds
15ml  Worcestershire sauce
4  potatoes, boiled
40ml  butter, melted

Method:
  • Heat oil in a saucepan. Add mince, onion and carrot. Cook over high heat, stirring until browned. Add chutney, tomatoes, cumin and Worcestershire sauce and allow to simmer uncovered for 10 minutes.
  • While the meat is simmering, peel and grate the cooked potatoes. Season the mince with salt and freshly-ground black pepper and spoon into a greased ovenproof dish.
  • Top with grated potato. Drizzle with butter, place under a hot grill and brown evenly for about five minutes.
Note:  Grated potatoes form a crispy golden topping, making it more enjoyable.
