PICADILLO

Preparation time:15 mins         Cooking time: 15 mins

INGREDIENTS:       Serves 2

Olive oil spray
1  cup frozen chopped/ diced onion
1  cup  frozen chopped/ diced green bell pepper
1  tsp  garlic, minced
225g  extra lean ground beef
130g  no-sugar-added, low-sodium canned crushed tomatoes
8  green olives, pitted and quartered
1  tbsp  capers, drained
1/4  cup raisins (optional)
2  tbsp  Worcestershire sauce
2  tbsp white vinegar
Salt and freshly ground black pepper

Method:
  • Heat a non-stick skillet over medium-high heat and spray with olive oil spray.Add onions, green bell pepper and garlic. Saute for 2 to 3 minutes. Add beef and break up into small pieces with the edge of a spoon while it browns, about 2 minutes. (drain excess fat, if any.)
  • Add crushed tomatoes and mix well. Add olives, capers, raisins, Worcestershire sauce and vinegar. Cook for 10 minutes. Taste for seasoning; and more vinegar or worcestershire sauce, if needed. Add salt and pepper to taste. Serve with white rice.
