POLYNESIAN BEEF

INGREDIENTS:       Serves 2

250g  beef
2  tbsp  oil
2  tomatoes, in wedges
1  onion,sliced
150g  red, yellow and green pepper
4  spring onions
1  stalk celery
2  canned pineapple rings
2  stalks lemongrass
For the marinade:
1  tbsp soy sauce
1-1/2   tsp sugar
1  clove garlic
10g  ginger
3  kafir leaves
For the sauce:
1/2  cup chicken stock
1  tbsp corn flour
20ml soy sauce
1  tbsp  sugar
2  tbsp  oyster sauce

Method:
  • To prepare the marinade, mix all the ingredients along with 1 tbsp oil. Add shredded beef and refrigerate for 30 minutes.
  • Julienne peppers; chop spring onion; slice celery; cut tomatoes into wedges and cut pineapple into thick strips.
  • Heat remaining oil in a frying pan over high heat, and stir-fry beef for 3-4 minutes.Remove from the pan and keep aside.
  • Add onion, pepper, spring onion, celery, lemongrass and pineapple. Cook for 3-4 minutes. Remove from the pan and keep aside.
  • In the same pan, add all the ingredients for the sauce and cook till it thickens. Add beef, vegetables and tomato. Season with salt and pepper and garnish with spring onion.
