INGREDIENTS: Makes 6
250g streaky beef bacon, chopped
1 medium onion, finely chopped
125g chunky cottage cheese
125g feta cheese
4 tbsp freshly chopped parsely
3 large eggs, whisked
600g spinach, blanched, excess water squeezed out and finely chopped
Salt and pepper, to taste
2 packs ready-made puff pastry
Salad and tomato sauce, to serve
Method:

Method:
- Preheat oven to 180C. Fry beef bacon until just cooked. Remove from pan, leaving beef fat, and place into separate bowl. Add onion to the hot pan and saute. When soft, remove from pan and stir into beef. Stir cheeses, parsley and two-thirds of the whisked eggs into the mixture. Mix in spinach and season with salt and pepper.
- Roll out the pastry and cut into six rectangles. Spoon the filling along the length of each of the rectangles. Brush some of the remaining egg onto the pastry edges. Fold pastry over the filling to form a roll and press down to seal.
- Place onto greased baking trays. Brush the last of the egg wash over each roll and bake in the oven for 20 minutes, until golden.
- Serve with salad and tomato sauce.
